Gauge is a table entry.

Stainless sheet uses its own gauge series. At the same gauge number it is usually slightly thicker than mild steel — 16 ga stainless is listed at 0.0625 in, mild steel at 0.0598 in — so do not swap materials without re-checking the thickness.

304 and 316 are sold to the same nominal thicknesses. 316 is about 1% denser than 304, so its real weight runs slightly above the column below. Stainless also springs back more than mild steel and usually needs a different K-factor or bend deduction.
